Spicy Korean Carrot Ginger Salad is a vibrant and flavorful side dish that is both refreshing and satisfying. Carrots:

 The star of the show! You'll need around 1 pound of carrots, peeled and julienned into thin strips.

Ginger

Fresh ginger adds a bright, zingy flavor to the salad. Grate about 1 tablespoon of ginger.

Gochugaru

This Korean chili powder brings the heat! Adjust the amount to your desired spice level, starting with 1 tablespoon.

Soy Sauce

Adds umami depth and saltiness. Use 1 teaspoon of soy sauce or tamari.

Rice Vinegar

Provides a necessary tang. Use 2 tablespoons of rice vinegar.
